Homemade chocolate walnut brownie with jaggery and whole wheat

Trust me, this is a yummy brownie and you will not miss sugar or the ‘white’ flour.

Ingredients:

  • 6 tbsp of unsweetened cocoa powder
  • ¼ cup of boiling water
  • ⅓ cup of oil
  • 1 egg
  • 1 cup grated or powdered jaggery
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  •  tsp vanilla extract
  • 1 cup whole wheat flour (atta)
  • chopped walnuts and dark chocolate chips (optional)

Method:

Mix cocoa with hot water to make a paste. To this add oil and mix well. Add the egg and whisk well to combine. Mix in the vanilla extract. Add jaggery and mix  till well combined.

Add the dry ingredients (wheat flour, baking powder, baking soda) and mix well. Add walnuts and dark chocolate chips. Transfer to a cake tin and bake for 30-40 min at 180C.

Note: The batter will be almost like a cookie dough.

Optional: Orange glaze with orange juice and sugar.
