Halwas

Wheat halwa

Roast the wheat flour till it becomes aromatic. Take it off the flame, add in water and make a runny batter without lumps. Put it back on the stove and cook. Add sugar and salt and oil/ghee as needed.

Nuts and dry fruit halwa (powdered nuts, dry fruits like dates, figs, raisins, apricots, powdered oats, cocoa powder)

Mom’s raw mango, jaggery, chilli halwa/jam

Milk peda/barfi

 

Ingredients

1tbsp ghee

1/2cup milk

1.5cup milk powder

1/8 cup sugar

cardamom powder

pinch of salt

saffron strands to make it into kesar peda (optional)

Method

Add ghee and milk. Then add milk powder,salt and sugar and cook till it thickens and forms a dough. Do not overcook. Take it off the heat and stir in the cardamom powder and set/shape to pedas/barfi.

Mysorepak

Ingredients

1 cup besan

¾ cup oil

¾ cup ghee

1 cup sugar

½ cup water

Method

Roast besan slightly. Transfer to a bowl.

Heat oil and ghee. Add half of it to besan and mix well.

Heat sugar and oil in a pan and cook till it reaches one string consistency.

Add besan mixture and mix well. Then add  the remaining oil/ghee. Cook till it gets bubbly. Turn off the heat stir for a couple of minutes and transfer to greased pan. Slice and serve.

Recipe references includes both soft and hard versions of mysore pak. Yet to try the hard mysore pak.
