Homemade Ciabatta bread

Ciabatta is an Italian bread also known as slipper bread.

Method

The process involves making Biga (pre-fermentation) the day before and then mixing in the other ingredients.

Biga:

1/2 cup flour
1/4 tsp yeast
1/4 cup water

Mix them and let it sit overnight.

Next day, combine the following ingredients with the biga and knead well.

2 cups flour
1/2 tsp yeast
1 cup and 2 tbsp water
1 tsp salt
Let it sit for a few hours until it has tripled in volume.

Transfer it to the baking sheet and let it rise for another 40min.

Bake for 30min at 250C.
